The primary school bratří Fričů Ondřejov, near Prague, has recently been upgraded with a new building, designed and constructed to the latest “Passive House” standards: Heating and hot water are supplied via geothermal energy and a 30 kWp solar energy system provides green electricity. Around 540 students are taught and fed here, and the school kitchen also delivers hot meals for nearby kindergartens and nursing homes, serving up to 800 meals per day. The demands on the kitchen are therefore very high, producing large quantities of high quality food, with the cooking equipment aligning with the sustainable philosophy of the building in terms of energy efficiency.
The requirement:
- The client needed a modern primary school for 540 children, built to Passive House standards. The focus was on sustainability and efficiency to keep energy costs and environmental impact as low as possible.
- The kitchen was designed to have a production capacity of 800 meals per day, with a vision for future expansion to serve additional meals, including the nearby kindergartens and nursing home.
- The quality of the meals for the children was developed to be balanced, healthy, and diverse.
- The kitchen must meet the demanding Passive House standards and the appliances were to be as energy-efficient as possible.
The solution
- An Ambach cooking block from the System 900 series was selected. This product line is designed for bulk cooking in community catering and production kitchens and included multifunctional cooking appliances as well as efficient food storage systems.
- System 900 is designed for maximum performance with economical energy consumption and optimal hygiene levels, featuring large worktop surfaces.
- Two electric tilting bratt-pans, two 150 litre kettles, and a rectangular static GN kettle with 230 litre capacity were integrated into the cooking block.
- Additionally, the block includes two electric solid top ranges and an electric multifunctional tilting bratt-pan 9EKB/155-IQ-WD to create a varied and flexible menu.
- All devices are equipped with the new Ambach Electronic Control for precise temperature regulation and maximum efficiency, to meet the required energy standards. With a rotary knob and a robust touch screen, operating the Electronic Control is easy and intuitive; all recipes and cooking processes can be easily executed.
- The appliances were optimized for energy consumption and comply with strict energy efficiency requirements, contributing to the reduction of operating costs as well as ensuring a sustainable long-term operation of the school.
- The cooking block was designed for a capacity of up to 800 meals per day, allowing the flexibility to not only meet the demands of the school but also the additional local public facilities that require catering.
- The entire building project took 18 months and was completed in February 2024 with the school finally opening for Autumn term in September 2024.
- The project was carried out in close collaboration with our local partners, MGVIVA a.s., which has extensive experience in planning and implementing high-capacity kitchens, to seamlessly integrate the kitchen technology into the overall design of the building.
